Let's get the dough moving: The automatic MANZ fermenters G64 and G66

The professional MANZ fermenters G64 and G66 provide each dough with the perfect environment to rise making your bakery - in the truest sense of the word - a BIG time success. All MANZ fermenters are equipped with the MANZ EasyPlus control which commands the fermentation process automatically and outputs an acoustic signal when the dough has risen to its perfect size.
Besides the manually adjustable fermenting values, the automatic control system provides 19 different fermentation programs with a maximum of 9 different fermentation levels each - all you have to do is press a button! Each type of pastry is thus guaranteed the correct fermentation program and the clearly laid out display informs you continuously about the fermentation process.

  • Four to six slide-ins for 60 x 40 cm baking trays
  • Automatic control and monitoring of the entire fermentation process via the MANZ EasyPlus control system
  • Automatic adjustment of fermentation temperature and humidity via the MANZ EasyPlus control system
  • Generation of the necessary humidity by means of an integrated steam generator (no direct cold water jet into the fermentation cavity!)
  • Gentle air recirculation for gentle dough rising

  • Absolutely steam-proof fermentation cavity door with patented MANZ hook latch
  • The slide-in guides can be taken out for cleaning with a flick of the wrist
